This sautéed shrimp dish is great for busy weeknights and let me tell you why:
Few and simple ingredients: you need shrimp, zucchini, garlic, lemon, olive oil, salt and pepper – only 7 ingredients.
One pan meal: you only need to use one pan to cook it.
It’s easy to make and it takes 15 minutes to prep and cook.
It’s delicious with the natural sweetness of shrimp and zucchini.
Shrimp is a great ingredient when you are short on time. It cooks really fast and goes well with a lot of vegetables. That’s why I usually have some shrimps in the freezer for those busy nights in the week. If you have herbs such as parsley, scallion and cilantro, throw them in.
Peel and devein the shrimp. Sprinkle some salt and pepper and mix well.
Wash zucchini and pat dry. Cut in half lengthwise and slice into 0.25'' - 0.4'' thick slices.
Finely chop garlic, set aside.
Place a sautéed pan over medium high heat. When it's hot, add olive oil and then add zucchini. Sauté, stir frequently and add a pinch of salt and pepper. When zucchini is 80% cooked to desired doneness (for me it's about 2 minutes), transfer to a plate.
After transferring zucchini to a plate, add a little olive oil to the pan. Add shrimp to the pan, place them in one layer and let them cook undisturbed for 1 - 2 minutes.
After 1 - 2 minutes, when the side that touches the pan of the shrimp has developed nice colors, flip them. Add garlic and after about 30 seconds, add zucchini. Mix and sauté everything together, add salt and pepper as needed.
When everything is fully cooked (just another minute), take the pan off the heat and pour lemon juice over. Mix well and transfer to a serving bowl.
